Roast Chicken with Radicchio

Thai-inspired roast chicken and wood-fired radicchio, cooked together in Dome Gen 2 by @daladk. One oven, full meal, big flavor made easy.

Ingredients

For the chicken 

  • A handful of coriander with roots, roughly chopped 
  • 7 garlic cloves, roughly chopped 
  • 200g unsalted butter, softened 
  • A generous pinch of salt 
  • 3 tbsp ground white pepper 
  • 1.5kg whole chicken 

For the radicchio 

  • 1 radicchio, quartered 
  • A generous drizzle of olive oil 
  • A pinch of salt 

For the radicchio dressing 

  • 3 tbsp chilli jam 
  • A small pinch of salt 
  • 1 tsp palm sugar 
  • 1 tbsp lime juice 
  • 1 tbsp fish sauce 

To finish 

  • A handful of crispy shallots 
  • A sprinkling of mint leaves

Step 1

Preheat the Gozney to 180°C / 355°F on a low flame. To prepare the chicken, blend the coriander and garlic in a blender, then stir in the softened butter, salt and white pepper. Loosen the chicken skin using a spoon and spread the butter mixture underneath.

Step 2

To cook, place the chicken into a cast iron pan and roast until the skin develops a good colour. Turn off the flame, close the door and leave the chicken in the oven for 20-30 minutes. Check the internal temperature, then return for a further 10-15 minutes if needed, until the chicken reaches 73°C / 165°F.

Step 3

To prepare the radicchio, place the quarters into a cast iron skillet, drizzle generously with olive oil, season with salt and roast in the oven for 10-15 minutes until lightly charred and tender.

Step 4

To make the dressing, mix together the chilli jam, salt, palm sugar, fish sauce and lime juice.

Step 5

To serve, remove the chicken from the oven, place onto a serving plate with the radicchio, drizzle over the dressing, and finish with crispy shallots and mint leaves.
