Step 1
Preheat the Gozney to 180°C / 350°F. To prepare the dry rub, mix the smoked paprika, garlic powder, onion powder, cayenne pepper and black pepper together. Generously season each short rib with salt then rub the mixture evenly over the short ribs and set aside, you could place them in the fridge overnight if you have time.
Step 2
To sear the ribs, heat a shallow cast iron pan in the oven until hot. Add a drizzle of olive oil and then the short ribs, fat side down. Place them into the oven and turn them until golden and brown on all sides, then remove from the pan and set aside.
Step 3
To cook the base, remove the fat from the pan and discard. Heat the pan in the oven and once hot add a drizzle of olive oil. Add the carrots, onion and celery to the pan and sauté for 8-10 minutes until softened, using a lid will help the vegetables sweat.
Step 4
Make a hole in the middle of the vegetable mixture and add a drizzle of olive oil and the garlic bulb, sweat for a further few minutes. Stir in the tomato paste and place back into the over for 3-4 minutes.
Step 5
Add the short ribs back into the pan. To braise, deglaze the pan with the cider or beer, scraping the base to release any caramelized bits. Place back into the oven until the alcohol has reduced by half.
Step 6
Pour in the stock and add the bay leaves, cover with a lid or foil. Transfer back to the oven and cook gently for 3-4 hours until the beef is tender and falling off the bone.
Step 7
For the mash potato, place the salt into the bottom of a cast iron pan. Stab the potatoes with a knife and place on top of the salt. Place the pan into the oven and allow to bake for 40 minutes – 1 hour until soft.
Step 8
Once the potatoes are cooked scoop the flesh into a sieve or food mill and work into a fine mash. Stir in the butter and the cream and a generous pinch of salt. Set aside and keep warm.
Step 9
Remove the short ribs from the oven, they should be falling off the bone. Set aside and allow to rest.
Step 10
For the bread rolls, increase the heat of the oven 220°C / 430°F. With a sharp knife make a cross in the top of the dough and sprinkle with flour. Place into the oven and bake for 10-15 minutes until the dough is baked, turn them occasionally to ensure an even colour.
Step 11
To serve, place the mash onto a warmed platter and top with the short ribs, the braising liquor and vegetables spooned over. Sprinkle over the parsley and a grind of black pepper, serve with the bread rolls.
