Baked Sea Bass with Thai Green Chilli Sauce

Ingredients

For the fish 

  • 5 leeks, sliced into 8cm pieces 
  • 2 whole sea bass, cleaned and gutted 
  • 1 bunch coriander with roots, finely sliced 
  • 4 garlic cloves, crushed 
  • 1 lemon, sliced 
  • A generous glug of olive oil 
  • 2 tbsp fish sauce 

For the Thai green chilli sauce 

  • A handful of coriander, roughly chopped 
  • 6 garlic cloves, roughly chopped 
  • 3 green Thai chillies, roughly chopped 
  • 2 tbsp fish sauce 
  • 1 tbsp palm sugar 
  • Juice of 1 lemon

Step 1

Preheat the Gozney to 250°C / 480°F. To prepare the fish, place the leeks into a large cast iron roasting pan and lay the sea bass on top. Divide the garlic between the fish cavities, adding the coriander and lemon slices. Drizzle generously with olive oil and fish sauce.

Step 2

To cook, place the pan into the oven and roast for 20–30 minutes until the fish is cooked through and the skin is nicely browned. If the colour develops quickly, turn off the flame and allow the residual heat to finish cooking.

Step 3

To prepare the Thai green chilli sauce, blend the coriander, garlic and chillies together or finely chop by hand. Stir in the fish sauce, palm sugar and lemon juice, adjusting the consistency with a little olive oil if desired.

Step 4

To serve, place the fish onto a serving board with the leeks and spoon over the Thai green chilli sauce.
